The incredible fresh flavors of the Middle East make a welcome lunch as Summer comes barging in. Summer didn’t wait this year, so neither are we since our farming partners, Peach Mountain Organics & Patchwork Gardens are already swimming in summer produce. Local Tomato, Peach, & Housemade Ricotta Caprese
Peaches and tomatoes ripen at roughly the same time here in Ohio and they also pair together really well, hence the salad. A dish that pulls peaches over to the savory side. Wedges of juicy local tomato and ripe wedges of peach are plated with a creamy scoop of housemade ricotta, sprinkled with Maldon salt, fresh basil leaves from our herb garden and a grinding of black pepper, drizzled with really good extra virgin olive oil. This is a dish inspired by Kim Korkan, my chef mentor from The Winds Cafe. Served with grilled bread.

Shishito Peppers with Miso, Parmesan & Sesame
Wiley first tried this combination at The Girl and the Goat, Stephanie Izards restaurant, in Chicago. She thought it an unlikely pairing but considering the source, decided to give it a try. You can tell how she felt about it by the fact that it’s on our menu! Thanks, Stephanie, for the recipe! The shishitos are grilled, topped with the miso parm sauce and baked for a few minutes to lightly brown the sauce. The majority of the peppers are mild but every once in a while, you will find one with a little extra kick!

Fettucine Puttanesca with Shrimp
Ripe, homegrown tomatoes are barely cooked in olive oil with sliced garlic, salt and pepper. A paste-like puree of capers, anchovies, garlic, a pinch of chilis and lots of parsley is dolloped into the tomatoes. We add the shrimp, pasta and a handful of chopped olives, then toss and stir. We shower on the Parmesan and rush it to your table, and you savor the fruits of summer.

Salmon with Blackberry Serrano Butter
Simon, of Brenneman Farms, showed up with a box of local blackberries, just in time for us to make the blackberry-serrano butter that Chef Jarrod had been conceptualizing. The sweetness of the blackberries with the slight kick of roasted serrano peppers works so well with a crispy grilled salmon filet. Served with fried Yukon Gold potatoes and crispy sauteed broccolini.

Huaraches with Mushrooms al Pastor
Chef Jarrod has been obsessing over this dish so that our vegetarian & vegan friends can experience the wonderful flavors of al Pastor. He starts with braising oyster mushrooms, from our friends at Guided by Mushrooms, in the traditional marinade made with pineapple, achiote, and onion. The delicious concoction is then spooned over a masa cake and topped with queso fresco, pickled red onion, avocado crema, and cilantro. Served with jicama slaw and black beans. Let your server know if you’d like the vegan rendition with our vegan avocado crema.

Roast Chicken Thighs with Jamaican Sweet Spices
Wiley learned this recipe from a Cuban cook when she spent a season cooking in Key West. Allspice gives this roast chicken its signature Jamaican flavor, with fresh herbs, garlic and fresh-squeezed lime and orange juices coming in for the punch. The burnished chicken emerges from the oven crisp and heady with the smell of citrus and spices, and the juices are to die for. Served with coconut rice, grilled bananas and sauteed fresh vegetables.

Strip Steak with Haystack Onions, Rosemary and Herb Butter
We cut our strip steaks in-house the traditional way, leaving the outer edge rimmed with a bit of the fat cap. If you would like us to trim it fat-free, just let us know. The meat is rubbed with coarse salt, black pepper and rosemary, then grilled and served the way James Beard liked it—with a dollop of herbed butter and a tangle of crispy fried onions. Served with our buttermilk mashed potatoes and fresh vegetables.

Pork Jezebel
It’s back, and better than ever. Slices of pork tenderloin are gently pounded into cutlets, salt and peppered, and seared on the hot griddle, then plated and spooned with our version of jezebel sauce, the tastiest thing in the world. In Texas, jezebel is peach jam spiked with horseradish and mustard. They pour it over a block of cream cheese and serve it with crackers. Here we add a glug of heavy cream to our homemade fresh peach jezebel, and in a few minutes on the stove it becomes a warm and heavenly sauce for pork. Served with our buttermilk mashed potatoes and fresh vegetables.
